Coconut Mocktail

This coconut water mocktail is a copycat of a drink I got on our babymoon in Hawaii. It's super refreshing, healthy-ish, and full of summer flavors like coconut and lemonade.

Mix coconut cream with a hand mixer on high for 1-2 minutes, or until soft peaks start to form. Then add honey and vanilla, and mix until thoroughly combined.

Combine ice, coconut water, and half of the coconut whipped cream in a large jar with a lid or a cocktail shaker and shake until the contents are mixed and the top is foamy.

Top with lemonade and stir to combine.

Dump the contents of the jar into two separate glasses with ice and top with a dollop of the remaining coconut cream.

A: Coconut water is just the liquid inside of a coconut. Coconut cream is a combination of coconut meat and coconut water, so it's higher in fat than plain coconut water and takes on a solid form.
