Buffalo Cauliflower Wraps

Description

These buffalo cauliflower wraps are the perfect meatless meal. Spicy buffalo baked cauliflower, sharp cheddar cheese, homemade cilantro ranch, and crunchy lettuce come together in a soft flour tortilla to make the most delicious easy wrap. 


Ingredients

For the cauliflower:

1 large head of cauliflower, cut into small florets

2 tablespoons olive oil or avocado oil

2 tablespoons taco seasoning 

4 tablespoons unsalted butter

1/2 cup Frank's RedHot Hot Sauce

For the cilantro ranch:

1/2 cup mayonnaise

1/2 cup full-fat plain greek yogurt or sour cream

1/2 cup cilantro

Juice of 1 lime

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon Worcestershire sauce (omit for vegetarian)

Everything else:

4 burrito-sized flour tortillas

1.5 cups shredded cheddar cheese

3 cups iceberg or romaine lettuce, chopped


Instructions

  1. Preheat your oven to 425°F. Add cauliflower to a sheet pan, drizzle with oil, and sprinkle with taco seasoning. Use your hands to mix until the cauliflower is evenly coated. Bake for 15-20 minutes or until tender.
  2. While the cauliflower is cooking, make the cilantro ranch. Add the cilantro ranch ingredients to a food processor and blend until combined. Set aside. 
  3. Add Frank's RedHot sauce and butter to a medium-sized saucepan over medium heat. Cook until the butter is melted, a couple of minutes. 
  4. Once the cauliflower is done, add it to the hot sauce and butter mixture and mix until the cauliflower is coated in the sauce. 
  5. Compile your wraps. Add lettuce, cheese, cauliflower, and cilantro ranch to the center of a tortilla, then fold in the sides of the tortilla. Then roll the tortilla from the bottom to the top, tucking in the sides as you go. 

Notes

If your tortillas are breaking (or don't feel pliable), heat them in a pan for a few seconds prior to compiling your wraps.
