Hash Brown Avocado Toast

Description

This hash brown avocado toast is our favorite easy breakfast. We throw a hash brown patty in the air fryer, cook an egg over easy, mash an avocado, and put it all together. It's so easy and delicious.


Ingredients

Scale

2 frozen hash brown patties (see note 1)

1 avocado

1.5 teaspoons lime juice (optional)

1 tablespoon chopped cilantro (optional)

1 tablespoon cooking oil 

2 eggs

Salt and pepper, to taste

Paprika or hot sauce, for topping


Instructions

  1. Cook the hash brown patties according to package instructions or using your preferred method. We cook them in the air fryer at 400 degrees for 10 minutes or until crispy.
  2. Mash one avocado in a bowl and set aside. If you want to dress it up a bit, add lime juice and cilantro.
  3. Add oil to a large pan over medium-low heat. Crack the eggs directly into the hot pan and wait until the egg turns from clear to mostly white and firm. Carefully flip the egg over and cook for another 20 seconds. Take the eggs out of the pan and lightly season with a dash of salt and pepper. 
  4. Divide the mashed avocado and apply it generously to the top of each hash brown, then top each hash brown with an egg. 
  5. If you like, lightly sprinkle each hash brown with paprika or hot sauce.  

Notes

  1.  Our favorite brand of frozen hash brown patties is Trader Joe's. If you don't have a Trader Joe's near you (I feel terribly sorry for you), Ore-Ida makes a perfectly good version that most grocery stores seem to carry.
