Description

This fried pickle dip has all the flavors of a fried pickle but in dip form! It's salty, tangy, savory, and super delicious. Eat it with potato chips, crackers, or veggies. We make it with a mixture of cream cheese and plain greek yogurt, so it's super creamy but has a healthy element too.


Ingredients

For the dip:

8 ounces cream cheese, softened

1 cup full-fat plain greek yogurt

1 cup kosher dill pickles, finely diced

1 ounce packet of ranch dressing mix

2 tablespoons fresh dill, chopped

For the panko topping:

1/2 cup panko breadcrumbs

1/8 teaspoon ground cayenne

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1 tablespoon unsalted butter


Instructions

  1. Add cream cheese, greek yogurt, fresh dill, pickles, and ranch seasoning to a large mixing bowl and mix with a hand mixer until smooth and well combined. Set aside. 
  2. Combine panko, ground cayenne, paprika, garlic powder, and black pepper in a small mixing bowl. Set aside.
  3. Melt the butter in a pan over medium-low heat. Add the panko mixture to the pan and cook, stirring frequently, until the panko is coated in the melted butter and lightly toasted, a couple of minutes. 
  4. Add half of the panko mixture to the dip and mix until well combined. Then transfer it to a serving bowl, top with the remainder of the panko, and serve! 

Notes

Fresh dill can be replaced with 2 teaspoons of dried dill.
