Pesto Butter Salmon

Description

This Pesto Butter Salmon is the quick homemade version of Costco's salmon milano with pesto butter. It comes together in a few minutes and only requires 4 ingredients (plus salt and pepper).


Ingredients

2 large salmon fillets

4 tablespoons unsalted butter, softened

3 tablespoons basil pesto

1/4 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh dill


Instructions

  1.  Add pesto and butter to a small mixing bowl and mix until well-combined. Place the butter mixture onto a sheet of plastic wrap and roll it into a log shape. Refrigerate for at least 30 minutes, or until ready to use.
  2. Preheat your oven to 400°F. 
  3. Add the salmon fillets to a sheet pan, then sprinkle evenly with salt, pepper, and dill. Cut the butter into six equal slices and place three on each fillet of salmon (see note 1). 
  4. Bake for 15 to 20 minutes, or until the salmon easily flakes with a fork and reaches 145°F.  

Notes

  1. If your salmon has skin, it may stick to the bottom of the sheet pan. You can spray your sheet pan with non-stick spray or line it with parchment paper to prevent sticking.
