Italian Artichoke Salad

Description

This Italian artichoke salad can be thrown together quickly and tastes like a salad you'd get at an Italian restaurant. It's easy and inexpensive to make, but the pimentos, artichokes, red onions, and parmesan cheese give it so much flavor. It's tossed in oil and vinegar and is so so good.


Ingredients

1/2 red onion, sliced very thin

1.5 ounces red wine vinegar

4.5 ounces olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1 head iceberg lettuce, chopped

1/2 head romaine lettuce, chopped

1/4 cup diced pimentos, drained

1 cup marinated artichoke hearts, roughly chopped

1/2 cup grated parmesan cheese


Instructions

  1. Fill a bowl with ice water and completely submerge the red onions. Allow them to soak while you prepare the rest of the salad. 
  2. Combine red wine vinegar, olive oil, salt, and pepper in a jar with a lid. Shake until the oil and vinegar are combined. Place into the refrigerator until you're ready to use. 
  3. Drain the water from the red onions. Add iceberg lettuce, romaine lettuce, pimentos, artichokes, red onions, and parmesan cheese to a large bowl. Mix until everything is combined. 
  4. When you're ready to serve the salad, toss with the dressing and serve with extra parmesan cheese and freshly ground black pepper on top. 

Notes

Do not add the dressing to the salad until you're ready to serve it—it gets soggy very quickly.
