You'll like this green eggs and ham. This recipe is a healthy spin on the book version. The eggs are colored green with pesto, so they're free of artificial food dyes, and they're packed with hidden veggies. Oh, and they taste super great too.

Ingredients

Ham Eggs Pesto Greek Yogurt Unsalted Butter Pepper Cherry Tomatoes Oil

Step 1

Cut your ham steak in half. Heat the ham according to package instructions. We heat ours in a pan over medium heat until warm, about 3 minutes on each side.

Remove the ham steak from the heat and set aside.

Add eggs, greek yogurt, butter, pesto, and black pepper to a small mixing bowl.

Whisk until combined.

Add oil to a medium-sized pan over medium heat. Add the tomatoes and cook for 1-2 minutes, until softened.

Then add the tomatoes to the bowl with the eggs and stir to combined.

Step 7

Turn the heat to low, add the remaining oil to the pan, then add the eggs.

Step 8

Use a spatula to continually stir the eggs until fully cooked, about 2 minutes.

Step 9

Serve the eggs on top of the ham steaks, drizzle with extra pesto, and enjoy!
