    You'll like this green eggs and ham. This recipe is a healthy spin on the book version. The eggs are colored green with pesto, so they're free of artificial food dyes, and they're packed with hidden veggies. Oh, and they taste super great too.

    This healthy green eggs and ham recipe is perfect for St. Patrick's Day, Dr. Seuss Day (March 2nd!), or any day when you're craving a delicious fun breakfast. Other recipes are packed with artificial green coloring, but our eggs are colored with fresh pesto, so they're totally free of artificial dyes. Plus, who doesn't love pesto? These pesto eggs are perfect for adults and kids alike.

    Key Ingredients

    • Eggs
    • Fully cooked boneless ham steak
    • Pesto- We make our own pesto, which has lots of hidden greens. You can also buy your favorite brand. Costco pesto is great in these pesto eggs.
    • Tomatoes- Tomatoes are optional in this recipe, but they make these green eggs and ham feel a little more grown up.
    • Greek yogurt- Greek yogurt adds a bit of protein and a ton of creaminess in these eggs.
    • Other ingredients/spices: black pepper, butter, oil

    Step-by-step Instructions

    Step 1: Cut your ham steak in half. Heat the ham according to package instructions. We heat ours in a pan over medium heat until warm, about 3 minutes on each side. Remove the ham steak from the heat and set aside.

    Step 2: Add eggs, greek yogurt, butter, pesto, and black pepper to a small mixing bowl and whisk until combined.

    Step 3: Add a ½ tablespoon of oil to a medium-sized pan over medium heat. Add the tomatoes and cook for 1-2 minutes, until softened. Then add the tomatoes to the bowl with the eggs and stir to combined.

    Step 4: Turn the heat to low, add the remaining ½ tablespoon of oil to the pan, then add the eggs. Use a spatula to continually stir the eggs until fully cooked, about 2 minutes.

    Step 5: Serve the eggs on top of the ham steaks, drizzle with extra pesto, and enjoy.

    Frequently asked questions

    What else can I serve these green eggs with?

    If you'd prefer to not eat ham, Sam-I-am, then try these green eggs with bacon, sausage, toast, or hash browns instead.

    What makes the eggs green?

    These eggs are mixed with pesto, which is what makes them green. We don't use any artificial colors or flavors to color these eggs.

    Can I omit the tomatoes?

    Yes! Just skip the step that involve the tomatoes (step 3 above).

    Ingredients

    • 8 ounce 8 fully cooked boneless ham steak

    • 5 5 large eggs

    • 1 tablespoon 1 plain greek yogurt

    • 1 tablespoon 1 unsalted butter

    • 2 tablespoons 2 pesto

    • ¼ teaspoon ¼ black pepper

    • ½ cup ½ grape or cherry tomatoes, quartered

    • 1 tablespoon 1 vegetable oil (we use avocado oil)

    Directions

    • Cut your ham steak in half. Heat the ham according to package instructions. We heat ours in a pan over medium heat until warm, about 3 minutes on each side. Remove the ham steak from the heat and set aside.
