Description
We make this Empress Gin cocktail with raspberries, honey, mint, lime juice, and a splash of tonic. The lime and mint give it mojito vibes (but with gin instead of rum), and the raspberries make it sweet and fruity.
Ingredients
1/4 cup raspberries
5-6 mint leaves
1.5 ounces Empress 1908 Gin
Juice of 1/2 lime
1 teaspoon honey
Splash of tonic water
Instructions
- Add raspberries and mint to the bottom of a lowball cocktail glass and use a cocktail muddler to muddle.
- Add the gin, lime juice, and honey and stir to combine.
- Add ice to the glass and top it off with a splash of tonic water. Garnish with a sprig of mint and serve!
Notes
If you don't have a cocktail muddler, use the back side of a fork to smash the raspberries and mint leaves.
We use honey to sweeten this drink. You can substitute simple syrup if that's what you prefer.
