Empress 1908 Gin is a brand of gin made in British Columbia. It's unique because of its signature indigo hue, which results from the addition of butterfly pea blossom. It has hints of grapefruit, juniper, citrus, and herbal notes.

Ingredient Notes and Substitutions
Empress 1908 Gin: Empress Gin is available in most parts of the United States, and the website has a helpful tool to find it near you. If you can't find it, substitute it with your favorite brand of gin.
Tonic water: This goes great with gin (hence the classic gin and tonic). Any brand works fine, just make sure it's not flat.
Raspberries: Fresh raspberries work best in this recipe.
Lime juice: Fresh lime juice works best in this recipe.
Mint: Use fresh mint leaves from the produce section of the grocery store (or your herb garden if you have one!). Spearmint works best (and is usually what is sold at the store).
Honey: We use honey to sweeten this drink. You can substitute simple syrup if that's what you prefer.

Step-by-Step Instructions
Step 1: Add raspberries and mint to the bottom of a lowball cocktail glass and use a cocktail muddler to muddle.
Step 2: Add the gin, lime juice, and honey and stir to combine.
Step 3: Add ice to the glass and top it off with a splash of tonic water. Garnish with a sprig of mint and serve!

¼ cup raspberries
5-6 mint leaves
1.5 ounces Empress 1908 Gin
Juice of ½ lime
1 teaspoon honey
Splash of tonic water
Instructions
- Add raspberries and mint to the bottom of a lowball cocktail glass and use a cocktail muddler to muddle.
- Add the gin, lime juice, and honey and stir to combine.
- Add ice to the glass and top it off with a splash of tonic water. Garnish with a sprig of mint and serve!
Notes
If you don't have a cocktail muddler, use the back side of a fork to smash the raspberries and mint leaves.
