Description
These gluten-free ice cream sandwiches only require two ingredients and take ten minutes to make. They're just like Chipwich cookie ice cream sandwiches, but gluten free and made at home. They're easy, delicious, and perfect for summer.
Ingredients
1 package (7 ounces) Tate's Bake Shop Gluten Free Chocolate Chip Cookies
Vanilla ice cream (about 7 large scoops)
Sprinkles (optional)
Instructions
- Use an ice cream scoop to add a scoop of ice cream to a cookie. Then place another cookie on top and gently press the cookies together until the ice cream is evenly distributed. Repeat with the remaining cookies.
- Wrap the sandwiches in plastic wrap or cling wrap and place in the freezer to set up for at least two hours. Enjoy within one week.
- Optionally, prior to wrapping the sandwiches in plastic wrap, add sprinkles to a bowl and roll the edges of the ice cream sandwiches in the sprinkles.

You can buy gluten-free Tate's at most grocery stores—I can always find them at Walmart. If you can't find Tate's, you can use whatever brand of gluten-free cookies that you prefer. You can even make your own.
