Ingredient Notes and Substitutions
Tate's Bake Shop Gluten Free Chocolate Chip Cookies: These cookies are my favorite shortcut. They're perfect for ice cream sandwiches because they're not too big or small, fairly sturdy, and soften up in the freezer to give you the perfect chewy texture.
You can buy gluten-free Tate's at most grocery stores—I can always find them at Walmart. If you can't find Tate's, you can use whatever brand of gluten-free cookies that you prefer. You can even make your own.
Vanilla ice cream: I love my ice cream sandwiches with vanilla ice cream. Use whatever brand you normally prefer. If you'd rather use a different flavor, feel free to mix it up. Chocolate would be delicious.
Sprinkles (optional): If you want to add some color to your ice cream sandwiches, you can roll the sides in sprinkles. For example, red, white, and blue sprinkles are perfect for Fourth of July and Memorial Day.

Step 1: Use an ice cream scoop to add a scoop of ice cream to a cookie. Then place another cookie on top and gently press the cookies together until the ice cream is evenly distributed. Repeat with the remaining cookies.
Step 2: Wrap the sandwiches in plastic wrap or cling wrap and place them in the freezer to set up for at least two hours. Enjoy within one week.
