Description
This smoked potato salad is such a fun twist on classic potato salad. Instead of boiling the potatoes, we smoke them on our Traeger, then toss them in a super light oil and vinegar-based dressing with feta cheese and onions. It's so light and delicious.
Ingredients
For the potatoes:
2 pounds red potatoes, cut into 1/2-inch cubes
1 tablespoon oil (we use avocado oil or olive oil)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
For the dressing and everything else:
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
1 teaspoon dijon mustard
Juice of 1/2 lemon
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
3 green onions, sliced thin
1/4 red onion, diced
1 cup crumbled feta cheese
Instructions
- Preheat your smoker to 350°F.
- Combine the potato ingredients in a mixing bowl. Add the seasoned potatoes to a metal sheet pan, aluminum foil, or grilling pan.
- Smoke for 35-45 minutes or until the potatoes can be easily pierced with a fork.
- While the potatoes are cooking, add all of the dressing ingredients except for the feta to a large mixing bowl and whisk. Then add the feta and stir until combined. Set aside until the potatoes are done.
- Add the cooked potatoes to the dressing and onion mixture. Mix until combined. Refrigerate until cold or serve warm immediately (both are good)! Store in an air-tight container in the refrigerator for up to 4 days.

If you don't have a smoker, bake the potatoes in the oven at 350°F for about 35-40 minutes or until easily pierced with a fork.
