Ingredient Notes and Substitutions
Red potatoes: Red potatoes work well in potato salad because they hold their shape while being cooked. If you want to substitute a different type of potato, try yukon gold or fingerling potatoes.
Green onions: If you don't have green onions (or don't like them), substitute chives.
Red onions: Don't substitute out the red onions—they're perfect in this recipe. If your red onions are super strong, try soaking them in ice water before you use them—it'll tame the flavor.
Feta: Tangy feta pairs perfectly with this light, summery potato salad. Don't skip it or substitute it!
Red wine vinegar: We use red wine vinegar in the dressing. If you want to substitute it, try apple cider vinegar.
Olive oil: Olive oil is the second base of the dressing. You can substitute a different mild-tasting oil. Avocado oil works well.
Dijon mustard (not pictured): This adds additional flavor to the dressing (and more great tang!). Don't substitute it!
Lemon juice (not pictured): You can use fresh or bottled (fresh is better!).
Seasonings: We use garlic powder, Italian seasoning, salt, pepper, and paprika to season the potatoes and dressing.

Step-by-Step Instructions
Step 1: Preheat your smoker to 350°F.
Step 2: Combine potatoes, oil, garlic powder, Italian seasoning, salt, pepper, and paprika. Add the seasoned potatoes to a metal sheet pan, aluminum foil, or grilling pan.
Step 3: Smoke for 35-45 minutes or until the potatoes can be easily pierced with a fork.
Step 4: While the potatoes are cooking, add red wine vinegar, olive oil, Italian seasoning, salt, pepper, garlic powder, green onions, red onions, dijon mustard, and lemon juice to a large mixing bowl and whisk. Then add the feta and stir until combined. Set aside until the potatoes are done.
Step 5: Add the cooked potatoes to the dressing and onion mixture. Mix until combined. Refrigerate until cold or serve warm immediately (both are good)! Store in an air-tight container in the refrigerator for up to 4 days.

Ingredients
For the potatoes:
2 pounds red potatoes, cut into ½-inch cubes
1 tablespoon oil (we use avocado oil or olive oil)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper
½ teaspoon paprika
For the dressing and everything else:
¼ cup red wine vinegar
½ cup extra virgin olive oil
1 teaspoon dijon mustard
Juice of ½ lemon
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon garlic powder
3 green onions, sliced thin
¼ red onion, diced
1 cup crumbled feta cheese
Instructions
- Preheat your smoker to 350°F.

Highly recommend this recipe! It is so good and I love the flavor! Lighter than your typical potato salad and I feel like this is a much healthier option but I think better. I’m a Traeger novice and still feel very intimated using it, but I followed their directions as stated and it came out perfect. Will definitely make again!
