My mom has been making a super easy blender salsa for years using canned tomatoes and Rotel. It only takes about five minutes to make and it's our go-to recipe for delicious, fast salsa.
This peach mango salsa is a fun summer twist on my mom's classic recipe, and I might even like it more than the original. It's a little sweet, a little spicy, and super flavorful. It has a smooth, restaurant-style texture. It lasts about a week in the fridge and gets better the longer it sits.
It's great with tacos, burritos, quesadillas, rice bowls, and chips. We have been devouring it all summer long. It's especially good when eaten pool- or beach-side
You can also serve this chicken over salad, with veggies, or summer BBQ style with baked beans, corn, mac and cheese, or whatever else you love.

Key Ingredients and Substitutions
A peach: Use fresh fruit! We haven't tested canned peaches, but they're no substitute for a fresh, juicy summer peach (but if you do try canned peaches, let us know how they work!).
A mango: Use a fresh mango!
Cilantro: Fresh cilantro is key here—we use an entire bunch. Don't substitute dried cilantro in this recipe.
Diced canned tomatoes: We've tried this recipe with fresh tomatoes and canned tomatoes and actually prefer the texture and taste of the canned tomatoes better. We like fresh tomatoes in our chunkier salsas, but the canned tomatoes are perfect for this smoother salsa recipe.
Original-Style Rotel: Rotel is a combination of canned tomatoes and green chiles, plus some spices. We use the original style, but you can use mild or hot depending on your preferences.
Sweet Onion: You can substitute a white or yellow onion in a pinch.
Lime juice: Fresh lime juice is best, but bottled works too.
Granulated sugar: You can use your favorite sugar substitute instead if you prefer.
Spices: Garlic salt

Ingredients
½ sweet onion
1 peach, cut in half and pit removed
1 mango, cut in half and pit removed
1 bunch of cilantro, stems removed
28-ounce can of diced tomatoes
10-oz can of Original Rotel
3 tablespoons lime juice
1 tablespoon granulated sugar
1 teaspoon garlic salt
Instructions
- Add the onion to a food processor and process until it's finely diced. Then add the peach and mango and process until they're reduced to small pieces.
- Add the remaining ingredients and process until smooth with very small chunks.
- Store in an air-tight container the refrigerator for up to a week. It tastes better on the second day!
