    These Traeger Smoked Baked Potatoes are coated in butter and salt, then smoked until they're perfectly crispy on the outside and soft on the inside. They're super hands-off and easy and a perfect vessel for all of your favorite loaded potato toppings.

    Why We Love These Potatoes

    • They're easy: These baked potatoes only require a couple of simple steps and 40 minutes of mostly hands-off cooking time in your Traeger or pellet grill.
    • They're super tasty: We love the texture of these potatoes. The salt and butter make the skins super crispy and delicious (you'll actually want to eat them!), and the insides get super soft.
    • They're perfect for parties: We love serving these potatoes to large crowds because they're so inexpensive, easy, and foolproof. They're perfect for summer grilling parties and fall football gatherings.

    Ingredient Notes and Substitutions

    Russet Potatoes: Russet potatoes are the big brown potatoes you picture when you think of a potato. They're the best option for baked potatoes because they're high in starch and low in moisture. When baked (or in this case, smoked) they get crispy on the outside and fluffy on the inside. If you need an alternative, try Idaho potatoes.

    Butter: We use good quality, unsalted grass-fed butter (we love Kerrygold and get it cheapest at Costco), but you can use whatever you typically prefer. If you use salted butter, you'll want to reduce the salt in the recipe.

    Salt: We prefer sea salt.

    Your favorite toppings: We love more butter and salt, black pepper, bacon, sour cream (or greek yogurt for a lighter option!), shredded cheddar cheese, green onions, and pickled jalapeños. See our "Suggested Toppings" section below for more recommendations.

    Step-by-Step Instructions

    Step 1: Preheat your Traeger or pellet grill to 425°F.

    Step 2: Run your potatoes under cold water and scrub with your hands to remove any dirt. Then dry them with a towel and poke each side of the potatoes several times with a fork.

    Step 3: Place your potatoes directly on the grill grates of your Traeger or pellet grill. Use a basting brush to brush on half of the butter. Then sprinkle the potatoes with half of the salt. Close the lid and cook for 20 minutes.

    Step 4: After 20 minutes, flip your potatoes and top with the remainder of the butter and salt. Then cook for an additional 20 minutes.

    Step 5: Remove your potatoes from the grill and top with your favorite toppings or serve with butter, salt, and pepper.

    Top Tips

    • If you don't have a basting brush, a paper towel can be used. Just dip the edge in a little bit of the butter, then rub it onto the potatoes.
    • A good quality butter makes all the difference in the flavor of these potatoes. We love Kerrygold Irish Butter. Good salt makes a difference too—we love sea salt.
    • Try to keep the temperature on your Traeger steady for the duration of the cooking time. Minimize the amount of time you leave the lid open.

    Topping Suggestions

    Traditional: Butter, salt, and freshly cracked black pepper

    Loaded: Sour cream, bacon, shredded cheese (cheddar is great), and sliced green onions

    Taco: Ground beef with taco seasoning, shredded cheese, sour cream, black olives, avocado, pickled jalapeños, and salsa

    BBQ: Pulled pork or chicken (check out our Traeger pulled pork for an easy recipe), shredded cheese, cole slaw, and BBQ sauce

    Frequently asked questions

    Can I make these baked potatoes in the oven?

    Bake at 425°F for 40 minutes on a baking sheet and follow the same instructions (but replace the Traeger with your oven!).

    How do I store the leftovers?

    Store the leftover baked potatoes in a baggie or air-tight container for 3-4 days. To reheat, place in the oven at 425°F until warm or air fry at 400°F for 3-5 minutes, or until warm.

    How long does it take to cook potatoes on the Traeger?

    Ours take about 40 minutes at 425°F. That's the sweet spot for perfectly crispy on the outside and fluffy on the inside potatoes.

    1 tablespoon salt, divided

    4 tablespoons unsalted butter, melted, divided


    Instructions

    1. Preheat your Traeger or pellet grill to 425°F.
