Ingredient Notes and Substitutions
Flank Steak: Flank steak comes from a cow's abdominal muscles and has lots of flavor. It's not the most tender cut of meat, so it's best sliced thin against the grain. It's perfect for serving in tacos or on salad. Skirt steak or flat iron steak are good substitutes.
Taco Seasoning: You can make your own taco seasoning or buy it. We love Siete taco seasoning, but use whatever you normally buy and love.
Lime Juice: Fresh lime juice works best, but bottled lime juice is a good substitute.
Garlic: Fresh garlic is best, but bottled minced garlic works as well.
Oil: We use avocado oil. Use whatever mild-tasting oil you usually buy.

Step-by-Step Instructions
Step 1: Mix flank steak, oil, taco seasoning, and lime juice in a ziplock baggie and place in the refrigerator for at least 30 minutes or up to 24 hours.
Step 2: Set your Traeger to high. Once it reaches 450°F, place the flank steak directly on the grill grates. Cook for 7-8 minutes per side, or until the internal temperature reaches 125°F (for medium rare). Remove the steak from the heat and allow it to rest for 10 minutes.
Step 3: Thinly slice the steak against the grain (cut it in the opposite direction that the muscle fibers run). Serve with tacos, quesadillas, salad, or anything else you can dream up.

Juice of 2 limes
