    This hearts of palm rice with cilantro and lime is the easiest low-carb healthy side of all time. You can make it with 5 ingredients in 5 minutes. It's great with burrito bowls, tacos, or chicken or fish. It's a delicious alternative to regular rice and is so much faster.

    This cilantro lime hearts of palm rice is perfect for Whole30, Keto, Paleo, low-carb, and gluten-free diets. It's also great if you're short on time and need a super fast side that everyone will love. It comes together in one pan, so minimal cleanup is required (great for Spring cleaning!), and it's so easy.

    We love this hearts of palm rice with Mexican dishes. Think of it as a healthy alternative to Chipotle's cilantro lime rice. It'd also be a great healthy Cinco de Mayo recipe. Pair it with our Mexican black beans, sweet potato tostadas, jalapeño popper chicken enchiladas, or blackened mahi mahi tacos (and don't forget the margaritas!).

    What is hearts of palm rice?

    Hearts of palm is found in the core of certain palm trees. It's high in fiber, iron, zinc, magnesium, and potassium. The flavor is fairly neutral, so it's a great vehicle for other flavors. I think it tastes like a super mellow artichoke but with a denser texture. Riced hearts of palm is just hearts of palm cut into pieces that resemble grains of rice. It's not really rice at all! Think of it as a rice alternative, similar to cauliflower rice (but way tastier, in my opinion).

    We get Trader Joe's riced hearts of palm or Palmini hearts of palm rice. Our local grocery store actually carries the Palmini riced hearts of palm, but you can also order other brands on Amazon (such as this Natural Heaven hearts of palm rice).

    Step-by-Step Instructions

    Step 1: Add riced hearts of palm to a pan over medium heat. Add cilantro, lime zest, lime juice, and salt. Stir until combined, and cook for 2-3 minutes, until warm.

    Frequently asked questions

    What if I can't find hearts of palm rice?

    If you can't find hearts of palm rice in your local grocery store or you don't live near a Trader Joe's, you can order hearts of palm rice. You can also substitute cooked cauliflower rice or white rice.

    How do I store and reheat this?

    You can store this in an air-tight container in the refrigerator for 3 or 4 days. Reheat it in a pan over medium heat for 2 or 3 minutes, or in the microwave for 1 minute.

    What does hearts of palm rice taste like?

    Ingredients

    • 9 ounces 9 riced hearts of palm

    • 2 tablespoons 2 cilantro, finely chopped

    • Zest of Zest of 1 large lime

    • Juice of Juice of 1 large lime

    • ¼ teaspoon ¼ salt

    Directions
