    This chorizo queso fundido is the perfect stringy cheese dip. It's delightfully cheesy, the perfect level of spicy, and so so easy to make. It's loaded with chorizo, mushrooms, onions, jalapeños, and super melty cheese. It will satisfy all of your cheese cravings.

    This chorizo queso fundido is the perfect party appetizer. It's fast and easy to make, only requires one pan, and feeds a crowd. It'd be a great Super Bowl snack or perfect for Cinco de Mayo.

    Key Ingredients

    • Oaxaca cheese or Queso Quesadilla- Oaxaca cheese is a Mexican cheese that tastes a lot like monterey jack, but with a mozzarella-ish texture. You can find it in the refrigerated section at the grocery store, but if you can't find it, monterey jack is a good alternative. Queso quesadilla is a Mexican melting cheese that also tastes great in this dish. We like to do a mixture of the two, but you can just use one or the other.

    • Baby bella mushrooms (optional)
    • Pickled jalapeños
    • Onion
    • Cilantro- for garnish

    Step-by-Step Instructions

    Step-by-step instructions of how to make chorizo queso fundido with six descriptive pictures.

    Step 1: In a large, oven-safe pan (we use cast-iron) cook the chorizo for 5 minutes.

    Step 2: Add the onions, mushrooms, and pickled jalapeños to the pan. Cook for 5-6 minutes, stirring frequently, until the chorizo is cooked through. Remove the pan from the heat.

    Step 3: Add shredded cheese to the top of the pan and cook at 300°F for 20 minutes, or until the cheese is melted and bubbly.

    Step 4: Top with cilantro and enjoy with chips immediately.

    Frequently asked questions

    Can I make this dip ahead of time?

    This dip is the most stringy and bubbly when enjoyed immediately. We don't recommend making it ahead of time. The texture just isn't the same.

    How should I serve this dip?

    This is a thick dip, best slathered on a sturdy chip with a spoon. Serve it with a good scoop-able chip, over nachos, or with a fresh flour tortilla.

    What if I don't have an oven-safe pan?

    If you don't have an oven-safe pan, transfer the chorizo mixture to an oven-safe dish prior to topping it with the cheese and baking.

    Ingredients

    • 9 ounces 9 chorizo

    • ½ ½ sweet onion, finely diced

    • 8 ounces 8 baby bella mushrooms, sliced thin (optional)

    • ¼ cup ¼ pickled jalapeños, diced

    • 20 ounces 20 Queso quesadilla or Oaxaca cheese, grated (see note)

    Directions

    Notes

    • Oaxaca cheese is a Mexican cheese that tastes a lot like monterey jack, but with a mozzarella-ish texture. Queso quesadilla is a Mexican melting cheese that also tastes great in this dish. We like to do a mixture of the two, but you can just use one or the other. If you can't find either, use monterey jack. Whatever you use, grate it yourself! The pre-grated stuff doesn't melt the same.
